(Chops) -2 Thick Cut Chops -1 Jar of “Akaka Falls Farm ” Mango Habanero Jam -1/2 tsp Kosher Salt -1/2 tsp Pepper -1 Tbl spoon Grapeseed Oil -1 tsp chopped chives -1 tsp chopped Fresh Basil
(Mashed Potatoes) -2 Idaho potatoes -1/2 stick salted Butter -1 Clove fresh Garlic chopped finely 1 Pint Heavy whipping cream
(Onion Gravy) -1 small Yellow Onion -1/3 cup All purpose Flour -1/2 stick salted butter 2 Cups dark beef stock
Method: Brush Chops with Grapeseed oil season with salt and pepper and place on a hot Broiler, Once on the Broiler Brush with “Akaka Falls Farm ” Mango Habanero Jam. After 30 seconds flip the chops and do the same on the other side. Remove chops and place on a elevated baking sheet in a 350 degree oven for 25 minutes or until the internal temp has reached 140 degrees. Once Chops are removed from the oven allow them to “Rest” for 10 minutes to finish the cooking process.
Peel and Boil Potatoes until they are thoroughly cooked and soft to the fork. Sautee chopped garlic and add to the potatoes along with the butter. Using a potato masher or a counter top mixer on low setting slowly add heavy cream until you reach the consistency that you desire.
Melt Butter in a sauce pan and add Flour, Cook the “Roux” until light brown is seen. Fine chop your onion and Sautee until all the liquid is cooked out (Set aside) Slowly add stock to the roux while stirring with a Wire whip (This will help avoid lumps) allow gravy to simmer but not boil (reduce heat) add onions.
Plate your meal as seen above, Chop fresh herbs and garnish before serving.
